Makes 12 Muffins 


3/4 cup dark brown sugar, firmly packed
1/2 cup chilled bacon drippings
1 cup buttermilk (add 1 tablespoon white vinegar to a cup milk and allow to sit for 5 minutes)
1 teaspoon vanilla extract
2 eggs, beaten

2 cups all-purpose flour
1 teaspoon baking soda
ó teaspoon salt
1/2 teaspoon black pepper
1 teaspoon ground cinnamon
1 1/2 cups blueberries
1/2 cup cooked, crumbled bacon

Preheat oven to 350°. Using a standing or hand mixer, cream together brown sugar and bacon drippings in a medium bowl. Stir in buttermilk, vanilla extract and eggs. Stir in flour, baking soda, salt, pepper and cinnamon. Fold in blueberries. Grease and flour muffin tins. Divide the batter between the muffin cups, then sprinkle with crumbled bacon. Bake for 20 minutes.
